Two that spring to mind:

1. Taking a brand new sports car (rear wheel drive) out on road test off the end of the production line. Commented on a bit more diff noise than usual...

...and a few seconds later, it seized sending me off on to the verge in a cloud of black tyre smoke! Turned out some muppet had forgotten to fill it with oil!

2. Moving house, bought a big trailer to move the garage contents - and I mean BIG! loaded it all up and took it on a test drive. Got to about 45MPH and it started snaking badly enough to be lifting alternate wheels off the ground - really thought I was going to have an "off"!
