The Single officer in the vehicle could provide me no evidence when I requested it stating that he had followed me for 0.3 miles travelling at 72 in a 50 and said that if I went to court it would be his word against mine and the last person to do this was fined £240. Now firstly is he able to issue the fixed penalty without me admitting to the offence? secondly can I request evidence of this? (which I know he doesn;t have?)

I do not think the policeman had the right to tell you of what allegedly happen in a court case as fine imposed would be up to the court/magistrate within their guide book as to what they can und cannot do as regards fine/points etc.
You have the right to plead innocence if you consider yourself innocent of 72 mph in a 50 mph zone
I would think the policeman would have to provide some evidence as to when the speedometer was last calibrated before clocking you at this speed.
You need to read all the documentation properly und seek advice from legal specialist if needs be.
