There are online courses that train you in the art of copy editing. Perhaps the best bet would be to find someone that was interested in doing that anyway and would like a good first job?!
I'm thinking more of a compiler-editor job. We have the material already on the web site and in the forums, but it has to be built into a 'story' to make a readable book. I have spoken to a few who would do that job, and one in particular who does it for publishers normally rather than for authors. I think you're more thinking of (what I would call) sub editors.
