Another one in your neck of the woods is the B9176 (between Alness and the Dornoch Firth) although it's a few years since I drove it.

A701 from Moffat along the Tweed valley.

The A82 is great, make it a loop with the A816 and A83.

The B1253 & B1251 is the scenic route from Bridlington to York, usually very quiet with some nice long straights that undulate enough to test your suspension.

I live in Kent & inside the M25 so I only get to enjoy such roads when on holiday.

Just about all rural roads on the Isle of Man,
The road from Peel to Kirk Michael, including the 'devil's elbow'. :D

There's a section which is almost straight and has no junctions adjoining but has a nasty raised section of tarmac, almost like a jump, 1-2 miles outside Kirk Michael. Very interesting... :yikes:

Just avoid the Quarterbridge roundabout (3 entrances) at rush hour, as you will find the roundabout empty with 3 drivers at the entrances all waving each other to go first, Mexican stand-off style

A6068 between Colne and Cross Hills (crosses the Lancs/West Yorks border). Twisty but fairly wide NSL SC country road with great scenery that is great fun to drive IF you don't get stuck behind a slow moving lorry/bus or a 40-everywhere plonker. Or worse, you get stuck behind a LGV that's stuck behind a 40 everywhere plonker, so you cannot overtake.

Also stretches of the A59 and A629 as they bypass Skipton. Long straight clear wide NSL roads with great surface condition that you really can tonk down very safely.

If it's scenery you want -try some of the wilder parts of the Ardnamurchan peninsula - though if the last bit is as it used to be wouldn't recommend it for anything lower than a normal car - used to put stuff on the floor of the van last time i drove it - always ended up there anyway,no matter how slowly you drove

B660 north from Bedford to Kimbolton - though I believe its been neutered due to motorcycle fatalities.

A537 - Macclesfield to Buxton - 'The Cat and Fiddle' now 50mph (bikes again) but do it this way - uphill and you'll attract less attention and rarely get over 50.
Nearby is the Goyt Valley and an unclassified rollercoaster that runs from Kettlehulme on the B5470 south finishing near the Cat and Fiddle Pub - you have to go south as the last 3 miles are a single track road that's one way! Not for summer weekends - but great midweek especially in the dark - though you might find local rally boys up there. Want more? A5004 Long Hill from Buxton to Whaley Bridge.

A682 from Nelson to Long Preston - One of the UKs most dangerous roads, there are no real surprises but it's fairly busy and has few overtaking opportunities which probably accounts for the accident rate.

A628 Woodhead Pass and its southern cousin A57 Snake Pass are great roads but again busy, and don't miss A6024 over to Holmfirth from Woodhead

A701 tourist route from Carlisle to Edinburgh, but only in the winter and at night

B4009 from Newbury to Aylesbury

The Cat & Fiddle is always fun too, so long as it's not biker season and thus full of mobile scams. My GF loved that one too, doing that road when it was covered in snow, in an RWD car with a reputation for going sideways :)

Craven Arms to Much Wenlock

Snake Pass between Castleton and Glossop.

Job done!
