This week .. CW reminds me to eat two portions of fresh unprocessed fish per week as this gives me more Omega3 :drink:


Then the mag reminds me of a certain delicacy only to be found in France :cloud9: A "Paris-Brest". This chox bun .. topped with toasted almonds and filled with chocc0-praline. It was made in honour of the first Paris-Brest bike race in 1891... which was a ride from Paris to Brest and back again. The original riders wanted to win and not stop long for meals on this 750 miler.. so one patissier created the choux bun and made it shaped like a tyre and the choccy filling was supposed to represent the inner tube :lol: The topping with almond and the icing sugar was supposed to represent the tyre tread and dust from riding :lol:

The race is still held and the Paris Brest bun is still on sale at all patisseries of traditional repute .. per CW and my own perusal of such establishments whenevr I visit the country for quick and longr breaks. :lol:

ahhh .. per the cycling mags and the family dieticians who have been advising us in our training for family ride up some nasty hills/.

Chicken ,.. in a paremesan garlic and herb sauce (white sauce recipe which I think to be on page 2 of my " in geared up chef tog blog" :lol: )

Hey .. I love cooking. It's cathartic. and I feel great when folk taste and go YUMMMMMMMMMM! MMMM! ::bounce: over it all !


This week;s CW shows a chargrilled lean breast with asparagus tips and tomatoes with a similar sauce. Ahh . they are copying me recipes on here :lol:

Ah.. but good food feeds a brain ., So eat ,, chill and enjoy" Bon appetit! :bighand:

Jazz hust phoned me asking what to do with gherkins///


Umm I have a marrow patch in the garden.. I have other members of this family there. I tend to pickle gherkins . basically they are "babt cumcumber" I pickle them in a mix of water/vinergar/shopped dill and peppercorns... clove ginger.. horseradish.. blackcurrant and balckberry leaves.,, ginger.. cinnamon sticks and so on.

If I have let them mature . then I treat like a stuffed marrow. and slice . scoop out the flesh.. mash it . stir fry with whatever . and then stuff into the hollow . serve on a bed of lettuce and various other salad goodies and . :bighand: :bighand: Enjoy"

Marrow? I stuff with mince/sage.. onions and .,.. served with onion or carrot gravy.. it becomes .. OOOOOOOOOFHHHHHHHHH! if you . err. know what I mean :lol:

In the same mag.. OK .. it makes my wee pink :lol: but what the heck. Now I know what fired the Swiss. Hmmm .. I thought.. oh never mind .. I just noted .. a "rose colour" in the gents. I was naive. I thought .. "lighint or light headedness" .. but enough of this somewhat chidlish crudity on my part :lol:

It seems that beettoot . especially that juice which I used to discard when boiling these beetroots.. would make me ride faster :banghead: To think I chucked that juice :banghead:

OK . I will now put a raw beetroot in my liquidiser. Strain and add the juices from my boiled beets .. anhd let you know if I pedal better and faster here. :lol:

This week . veggies .. cooked .. or raw? OK .. best to have raw or steamed al dente.


And I have a couple of dips :twisted:

Classic tomato salsa..,

You need

3 green chillies (6 if you are a real hot man :wink:)

large white onion (you can use spring onions or red onion if preferred)

grated rind and juice of 2 limes

8 ripe tomatoes

bunch fresh coriander

teaspon sugar



To peel the chillies .. skewer them and roast in frying pan till skins blacken. Place in polythene bag and seal to steam off

Chop the onion put in bowl with the lime juice and rind.

Remove the chillies from the bag. Peel off the skins.. cut the stalks .. scopp out the flesh and chop .. put in another bowl.

Cut a cross in the tomatoes. Put in a bowl .. cover with boiling water Then plunge the tomatoes in cold water and remove the skins.

Dice the tomatoes Add to the chopped onions (which should have softened inthe lime juice. (if not add a little boiling water) Chope tha corainder and add.. with the chillies and the sugar. Mix well until the sugar has dissolved and all is coated in the lime juice. (Will keep in jar sealed with cling film in fridge for 4 days :wink:




Alternatively .. roast the tomatoes.. for a roast tomato salsa dip..

Or since avocados are also a wonder food.. how about Guacamole?


You need 4 toms.. 4 avocados.. juice of one lime.. 1 small onion.. 2 garlic cloves.. fresh coriander


Peel the tomaotoes as per above recipe. and chop them.

Cut the avocados in half. remove the stone of course :wink: Place the flesh in blender or use the hand blender to pulp the flesh to paste Add the lime juice.

Chop the inion finely and crush the garlic. Add to to the avocado paste Mix. hen add chopped coriander.

Remove the stalks from the chilliies Sacrpa out the seeds Chop finely and add to the avocado mixture. Add the tomatoes. Mix well.

Add any seasoning to taste. Place cling film over the bowl. Place in fridge for an hour and serve with toritlla chips and either steamed or raw veg.

This week .. CW tells me to eat mor K (potassium) on hte basis this keeps me young and fit :lol:

OK .. sources? Err potatoes.. aspargus . egss . err the normal stuff.


OK so a nice repcipe to enjoy and which is FUN to COOK :bighand: Easy to cook :bighand:

OK . this one from my wife .. Alice :bighand:

Chicken and asparagus soup. (Asparagus has K :lol: Personally . I like it al dente as a starter . dipped in garlic/herb butter :D

Alice has other ideas about me and my butter :roll:

OK .. make a decent stock (or cheat with Knorr :lol:)

You need fresh asparagus tips. IAlice lurks for "sell by dates :lol:.. She got 'em for just 10p last night :bow:

(Moral - seek out the "REDUCED COUNTERS" first .. and never be afraid to ask for MORE DISCOUNT PLEASE :lol: (Alice learned this from Wildy :neko: .. who can banter better than Brecht's "Mutter Courage" :lol:

Chicken Stock ( 1.5 pints .. any decent carcas or boiled drumstick with a bouquet garni pack will do this.. or cheat with Knorr etc. :lol:

Fresh dill/parsley (again .. Alice procured at 17p reduced from 68p :bow:

Garlic clove

cooked chicken (we've used left overs . but use any cooked reduced chicen


Rice noodles

one leek or spring onions (chopped}



Boil the apsaragus A DD THE HERBS
and the garlic and the rice noodles.

Stir in cooked chicken .. add the leek . simer away for 15 mins or so . Discard the herbs and garlic clove.

Serve with crusty bread and enjoy :bighand:

My other easy peasy recipe to give you K here :lol:

Side dish to serve with any roast fish/meat or roast veggie dish :lol:

You need 1.5 lb potatoes/ (Vrenchen uses King Edwards or Maris Piper for this one :wink: My own wife? whatever she bought reduced price :lol: )

tablespon Lurpak etc butter

cup dry white wine :cloud9: HIC!

cup veg stock .. OXO veg cubes . ooh CHEATY CHEATSTER me :lol:

lemon juice (we get Tesco value at 50p for big bottle :lol:

any chopped mixed herbs (seek out the reduced counter for any reduced :lol: ) We do /. Alice is never disappointed here. :lol:

chpo one or two leeks

OK .. cut the spuds into chunks and boil for 5 mins or so.7


Saute the chopped eeks in butter till soft

Place the par biled spuds and leeks in an oven proof dish.



Mix the wine and stock together .. pour over spuds and leeks.


Cook in 180 c oven till tender. enjoy :bighand:


CLAIRE .. Alice experimented . you can achieve in crock pot on/saucepan on slow hob burner.. :)

We think you can make this dish in your situation :wink:

This dish works well with any cooked or roasted meats and provides an essential K into diet. :lol:
